itinerary

Day 1 - Arrival Day

We look forward to welcoming you in the morning at a central location in Toulouse. From there, we'll journey together to the Château de Sibra, where we will spend two nights.

Saturday is a gentle day to begin our Château Tour of this region, which overlooks the French Pyrenees.

Sibra is an enchanting château, an arcadian idyll, oscillating between the past and the future  in the calm of a pastoral landscape.

Lunch will be served on the terraces, allowing you to savor the tranquil surroundings.

In the evening, we'll dine in the 19th-century Salon, enveloped in the château's historical ambiance.

Day 2

Breakfast will be served at Sibra, followed by a garden tour and a 1km stroll or bike ride to the ruined Château de Lagarde.

Lunch is French picnic style.

In the afternoon, enjoy an exclusive visit to the Château de Caudeval which is undergoing resoration. Following this we will have a private tour of Château de Queille’s and a candlelit dinner in its medieval chapel.

Day 3

After breakfast at Sibra, enjoy the vibrant Monday‑morning market in Mirepoix, a beautifully preserved 13th‑century bastide town in Ariège, where the arcaded Place des Couverts—surrounded by timber‑framed houses—is filled with stalls selling fresh local produce, crafts, antiques, and brocante in an atmosphere that draws visitors from across the region.

After lunch, we will journey to the fortified UNESCO city of Carcasonne to travel back in time and learn more about the history as presented by a local tour guide. This region is also famous for Cassoulet, the local speciality dish. And so, for dinner we will dine like the locals have for hundreds of years - rustic, home made and simply enjoyed. We will stay at the Hotel de Chateau which is located just outside the fortress gates.

Day 4

Following breakfast we shall journey on to Château de Pennautier. We will enjoy a private tour of the 17th Century château and most remarkably the gardens which were originally designed by France’s first landscape architect - André le Notre. We will learn more about the restoration of the château in the 1990’s and have an opportunity to explore their winery and cellars and enjoy lunch at their restaurant. Known as the “Versailles of the South”, this château is prestigious and filled to the brim with charm and elegance…

Mid afternoon we continue our journey to Château de Gudanes, where the Château Team will be eagerly awaiting your arrival with local sparkling wines and aperitifs. Having settled in, we will begin the stay with a historical tour of the interiors, followed by a welcome BBQ dinner on the front terrace.

Day 5

Breakfast is all about crepe making and mimosa’s!

Mid‑day, we’ll pause at the legendary Pont du Diable for a baguette‑style picnic in this scenic riverside historical site.

In the afternoon, we will then journey to the 17,000-year-old Niaux Cave, one of the rare prehistoric caverns open to the public, where you can view awe‑inspiring Paleolithic paintings.

Later, we’ll reconvene in the drawing room for an apéritif featuring a tasting of exceptional local wines—perfectly paired with conversation and camaraderie. Dinner is served in the Salon Manger.

Day 6

Begin your day by joining us in the château's kitchen to bake and prepare a selection of traditional French breakfast favorites. Experience the art of French patisserie firsthand, guided by our expert chefs. After this, choose between:

  • Joining the restoration team to assist with restoring the the Château’s 18th‑century frescoes.

  • Take a refreshing dip in the pool, engage in a friendly match of pickleball on the tennis court, or simply unwind at your own pace amidst the château's serene surroundings.

A casual late luncheon will be served in the Salon de Porcelaine, a space renowned for its elegant serviceware.

We invite you to a candlelit dinner, followed by an enchanting evening of poetry and prose, celebrating art, culture, and connection.

Day 7

After breakfast, we’ll set off for Foix, where we'll stroll through the lively market and visit brocantes, perfect for discovering local produce, artisanal goods, and antiques in a delightful setting.

Next, we'll visit the Château de Foix, an iconic medieval fortress overlooking the town. Within its towers and museum, you’ll explore immersive exhibits, interactive workshops like crossbow shooting or forging, and enjoy sweeping views across the Ariège valley and the Pyrenees. The museum traces its 9th Century origins back to the Counts of Foix, who shaped the region’s medieval history.

Following the château tour, we’ll enjoy lunch at a traditional French café in the old town of Foix—an excellent moment to relax and enjoy authentic regional cuisine in a charming, historic atmosphere.

For the finale, indulge in an elegant 18th-century banquet in the Salon de Musique, where the ambiance recalls the grandeur of royal courts. Conclude the night with spirited disco dancing, blending timeless elegance with modern flair.
